Ingredients

  • Salad
  • 1 Head of Romaine Lettuce or mixed baby greens, torn into bite sized pieces
  • 1 apple, cored and chopped
  • 1 pear, cored and chopped
  • 1 cup nuts (I used walnuts)
  • 1/4 cup dried cranberries
  • Lemon Poppyseed Dressing
  • 1/2 cup lemon juice
  • 1 t. dijon mustard
  • 2 t. chopped onion
  • 1/2 t. himalayan pink salt
  • 2/3 cup salad oil
  • 2 packets stevia
  • 3 T. blue agave nectar
  • 1 T. poppy seeds

Instructions

  1. Pile fruit, nuts, and cranberries on top of lettuce and drizzle with Lemon Poppyseed Dressing (recipe to follow) 2 servings
  2. Blend lemon juice, dijon mustard, chopped onion, salt, oil, stevia and agave nectar in blender until smooth. Slowly add poppy seeds, blending on low until blended. 8 servings
