This super easy dish can be prepared in a snap and on your dinner table in less than 30 minutes.

4 (4 oz) salmon fillets
salt and pepper, to taste
parchment bags or 15″ square parchment paper pieces
1/4 C. chopped fresh basil
4 t. Extra Virgin olive oil
1 lemon, thinly sliced

 

Preheat oven 400 degrees.
With skin side down, cut two slices into flesh of salmon fillets.
Stuff with basil.
Season fillets with salt and pepper.
Drizzle each fillet with 1 t. olive oil.
Place sliced lemon on top of each fillet.
Carefully place fillet in parchment bag or paper, and fold to seal tightly.
Bake 20 minutes.
Open carefully to release steam before serving.
