Ingredients 2 Tbsp. extra-virgin olive oil 1 large onion, diced 3 medium carrots, diced 2 cloves garlic, minced 2 C. peeled butternut squash, cut in ½" cubes ¼ tsp. ground allspice 1 tsp. Himalayan salt pinch cayenne pepper, or to taste 4 sprigs fresh thyme 4 C. low-sodium vegetable or free-range chicken broth 1 (14.5 oz) can no-salt-added diced tomatoes 2 C. lightly packed kale, ribs removed, coarsely chopped 1 C. low-sodium canned chickpeas Instructions Heat the oil in large soup pot over medium-high heat. Add the onion and carrot and cook until they begin to soften, stirring occasionally, about 6 minutes. Add the garlic and cook for 1 minute more. Add the butternut squash, allspice, salt and cayenne; stir to combine. Add the thyme, broth and tomatoes (with their juice). Bring to a boil then reduce heat, cover and simmer 10 minutes. Add the kale and chickpeas and cook for 10 minutes more until the squash is tender and the kale has wilted. Pick out the thyme sprigs and discard before serving. Print Zucchini-Cashew Soup Author: Michele Recipe type: Soup Prep time:  20 mins Total time:  20 mins Serves: 1   This awesome vegan soup is lowfat, low calorie and simple to make! Ingredients 1 large or 2 small zucchini, cut into chunks and steamed ¼ C. raw cashews Himalayan salt and/or Bragg Liquid Aminos (to taste) Herbal Seasoning or fresh herbs, like basil, chives, oregano or dill (optional, to taste) Instructions Soak cashews in enough water to cover for 1 hour; drain. Combine cashews, zucchini, salt and/or aminos, and seasonings (if desired) in blender and mix until smooth, adding water as needed for desired consistency. Lots of chopping required, but well worth the time. -recipe taken from Beachbody Ultimate Reset Program & Nutrition Guide Ingredients 1 t. extra virgin olive oil or safflower oil 2 T. finely chopped yellow onion 1 t. finely chopped garlic 1 small carrot, cut in thin diagonal slices 1 small celery stalk, cut in thin diagonal slices ½ t. peeled and finely grated ginger 2 C. water ¼ C. broccoli florets 2 T. chopped fresh green beans ¼ C. shredded Napa cabbage or bok choy 1 T. wakame seaweed (optional...I left it out) ¼ t. sesame oil 1 T. sliced green onion 1 T. miso paste mixed with 2 T. hot water (add more miso, to taste)* *Miso can be found in the "Asian" section of most supermarkets Instructions Heat EVOO or Safflower oil in soup pot on medium heat. Add onion, garlic, ginger, carrot, and celery and saute for 5 minutes until fragrant. Add water and simmer on low for 20 minutes until veggies are tender. Add broccoli, beans, cabbage, and seaweed.
