I’ve had several people ask for before/after pictures of my recent journey through the Ultimate Reset.  Luckily I planned well enough ahead to remember to take before and after pics!  As with all Beachbody programs (or any body-changing program that you choose to do), it’s highly recommended that you take pictures.  A lot of times we cannot notice changes on ourselves, but the proof is in the picture!  With that said, here are my pictures!       I officially lost 9 pounds during the 21 day process.  This is actually the “average” weight loss for this program.  I’m pleased with the results.  I feel SO MUCH BETTER!  My outlook on food has changed as well.  I realize now that food’s purpose for us is to nourish our bodies, not necessarily to please our palate.  It’s an added bonus that healthy, nourishing food CAN taste delicious! Day 7/Week 3  8/21/2012 HOLY COW!  It’s our LAST DAY!!  21 days of discipline, determination, but best of all…clean eating!   I think this will be my last day for a fruit breakfast for awhile.  While I’m pleasantly surprised at how well a bowl of fruit filled me up for the morning hours (along with at least 32 ounces of distilled water), I miss my Shakeology so much for breakfast that I cant wait to have one! For lunch I had jicama-avocado salad on top of a bed of greens.  I really liked the taste of it, however, the recipe instructed for me to marinade the jicama and avocado for a period of one hour and I actually marinated it for several.  This made the avocado a little too mushy.  I’d strongly suggest only marinating it for the time allowed and no longer than an hour.  Nonetheless, it tasted very good and I’d definitely make it again. We switched up the menu for the past several days. Tonight I decided to make a cucumber/avocado soup, stir fry veggies on a bed of short grain brown rice, and braised collard greeens.  None of us were too fond of the soup.  I think it *may* have tasted better chilled, as I served it at room temp, but I definitely don’t think I’ll be making it again.  We’re obviously hooked on the stir fry veggies!  They are SO GOOD!  Surprisingly enough, the braised collard greens were FANTASTIC!  Following the recipe, I sauteed garlic in olive oil before adding the chopped greens, then added vegetable broth, covered the pan, and simmered the greens for about 5 minutes.  Took the lid off, and cooked them a few minutes longer.  I had no idea collard greens could taste so good! Funny thing happened tonight as I was preparing our meal.  Our Hispanic neighbor knocked on our door holding a hot dish in her hands.  She told me she made too many nachos for dinner and was wanting to know if we wanted them…AS she was placing them in my hands.  Now let me tell you, we’ve been to several neighborhood pitch-ins and this lady can COOK!  I gave in to...

Day 6/Week 3   8/20/2012 Hard to believe it’s almost over!  We have approached day 20 of our 21 day detox/cleanse.  It’s been an adventure thus far! Today  I had kiwi, red grapes, green grapes, blueberries, green apple, strawberries and a big peach for breakfast.  Although I love fruit, I sure am missing my Shakeology for breakfast and can’t wait until I can start drinking it once again. Lunch was supposed to be avocado-jicama salad over greens but I failed to read the recipe that indicated that it needed to marinade in the fridge for an hour prior to eating.  It was a little late for this discovery so I decided to have that salad tomorrow and eat a spinach salad today.  This is the same salad I had yesterday (yes, it’s THAT good that I’ve had it now 3 days in a row!).  It’s jicama, cucumber, tomatoes and avocado over a bed of spinach drizzled with creamy garlic dressing. (you can find the dressing recipe under the Health & Fitness tab on this site)   For dinner I made an Asian Stir Fry complete with zucchini, broccoli, red bell pepper, carrot and bok choy.  I added these ingredients to my wok after I sauteed garlic and ginger in coconut oil and toasted sesame oil.  I added Bragg’s Liquid Aminos after I finished cooking it all.   I served the stir fry over a bed of short grain brown rice that I had baked in equal parts of organic vegetable broth and water.  This dinner was SO GOOD that even my pickiest eater in the house ate it and liked it! I’m notorious for having a sweet tooth after dinner.  I was hoping that for me this craving would disappear entirely while doing this Reset and it did wane somewhat but the battle of my mind is a tough one. lol  I must say, however, that my sweet craving has led me to enjoy grapes as an after dinner treat rather than something like cake or ice cream.  I had a few grapes after dinner this evening and I was completely satisfied.  Mission accomplished 🙂 Michele is a 30-something , WAHM who has dedicated...

Day 4/Week 3  8/18/2012     It’s day 18! I can’t believe I’ve stuck it out for 18 days now.  For those of you who truly know me, I’m sure you’re surprised as well! I once again didn’t take a picture of my breakfast. (we were in a hurry to get to the football field this morning to watch our little cheerleader in action) but I had the usual of grapes, strawberries, blueberries and apple. I can’t even begin to tell you how good this salad was that I had for lunch.  It’s pretty basic…a bed of spinach leaves topped with jicama, cherry tomatoes, cucumber and avocado.  I then drizzled homemade creamy garlic dressing on top.   If you’ve never had jicama, what I like to compare it to is the texture of a pear or uncooked potato, and to me it has a faint taste of a blend of apple and pear.   Some people say it’s comparable to a water chestnut, but I’d disagree.  I don’t care for water chestnuts, but I do like jicama!  It’s not overpowering by any means, it’s actually pretty bland, but good. It is a root vegetable that looks like a turnip. I think all of us doing this Reset could’ve passed on the dinner menu.  The recipe called for delicata squash, however I used acorn.  It was basically roasted squash with steamed green beans seasoned with EVOO, lemon juice, lemon zest, and Himalayan salt.  The beans were quite good!  The squash, however, ehhh not so good.  The recipe indicated to season it with EVOO, Himalayan salt, Bragg Liquid Aminos and lemon juice.  I tried that on my first half of my acorn squash and wasn’t digging it at all.  The second half I skipped  the recipe suggestion and squeezed lemon juice on it then drizzled with Agave nectar.  This gave the squash a more sweet flavor and to me it was a bit more tolerable. My dinner companions tried the Agave and thought it was disgusting. lol  Needless to say, we most likely will not be eating roasted squash again anytime soon. 🙂   We visited our local orchard today (http://www.beasleys-orchard.com/) to pick up the green...

Day 3/Week 3  8/17/2012 We are now officially at Day 17 of the Ultimate Reset!  I can attest that I’m sleeping good (aside from getting up at least twice to pee thanks to all the water I’ve been drinking and the inherited small bladder that I have). I’m waking up refreshed and well rested.  Far cry from the mornings before UR where I was sluggish and tired upon waking.   Breakfast consisted of my usual:  green grapes, red grapes, blueberries, strawberries and a green apple.  I didn’t snap a picture but you get the picture. lol I actually made this the night before in preparation for today’s lunch.  This is Moroccan Carrot Salad complete with carrots, lemon juice, cilantro, garlic, cumin, paprika, cinnamon, cayenne and Himalayan salt.  It smelled heavenly when mixed! For lunch I topped this on a few cups of baby salad greens for a scrumptious salad. I switched things up for dinner and decided not to go with the scheduled menu (which was Roasted Squash and Green Beans). Instead I made Hearty Vegetable Miso Soup (recipe can be found on this site) and had my local grocer make brown rice veggie nori rolls.  One of my favorite dinners! Day 2/Week 3  8/16/2012 I keep flirting with 145.  I haven’t been UNDER 145 pounds in close to 8 years.  While I’m once again stating that this is not a weight loss program, I can tell you that if I can get under 145 I will be THRILLED!!!!  My overall “goal” weight has been 140.  I’ve been trying to target this weight for several years now.  I’m hoping that I can hit that (or at least close) by doing this reset and then maintain that weight by incorporating my workouts and Shakeology back into my daily routine.  That’s the plan anyway. 🙂 Once again, fruit for breakfast!  YUM! I was on the go for lunch today so I had to pack my salad ahead of time.  I found more ripe grape tomatoes in my garden so I threw them on top.  They taste like candy!! Curried Cauliflower and Steamed Kale was on the dinner menu for tonight.  I know it seems basic, and not very filling, but since we are grain free this week our portions are rather large.  This is a large dinner plate and I pretty much loaded it up.  The cauliflower was baked with a light coating of olive oil and toasted curry.  It was fabulous!  And I’m actually a pretty big Kale fan now.  I had never tried it prior to reset but with a squirt of lemon juice and topped with pine nuts it’s excellent! According to Nutrition Data, Kale is  a good source of Protein, Vitamin E (Alpha Tocopherol), Thiamin, Riboflavin, Folate, Iron and Magnesium, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese. It’s not recommended to snack after dinner, however, for some reason I was being tortured.  It’s okay…tomorrow I’ll pick myself back up and start all over. 🙂 Michele...
