Morraccon Carrot Salad
- 1 pound carrots, coarsely chopped (a food processor helps!)
- 1/4 C. extra virgin olive oil
- Juice of 1 small lemon
- 1/4 C. chopped fresh cilantro or parsley
- 2 cloves garlic, crushed
- 1/2 tsp. ground cumin
- 1 tsp. paprika
- 1/4 tsp. cinnamon
- 1 tsp. Himalayan salt
- 1/2 tsp. cayenne (optional)
- Mix all ingredients in a large bowl.
- Cover and let marinate 2 hours or overnight.
