Morraccon Carrot Salad

Ingredients

  • 1 pound carrots, coarsely chopped (a food processor helps!)
  • 1/4 C. extra virgin olive oil
  • Juice of 1 small lemon
  • 1/4 C. chopped fresh cilantro or parsley
  • 2 cloves garlic, crushed
  • 1/2 tsp. ground cumin
  • 1 tsp. paprika
  • 1/4 tsp. cinnamon
  • 1 tsp. Himalayan salt
  • 1/2 tsp. cayenne (optional)

Instructions

  1. Mix all ingredients in a large bowl.
  2. Cover and let marinate 2 hours or overnight.
