Tasty Super Food Salad










We make this simple, delicious super nutritious salad all summer long.  It makes a perfect side dish for home and for pitch ins.  But when taking it to a pitch in make sure you make double because there won’t be any left to bring home!

Superfood Salad
Recipe type: salad
This recipe is packed full of healthy superfoods! The combination of ingredients is astounding!
  • ½ C raw sugar
  • ¼ C vinegar
  • ¼ tsp. himalayan salt
  • ¼ tsp. ground black pepper
  • ¼ C extra virgin olive oil
  • 1 bunch kale, stems removed and leaves chopped
  • 1 C frozen shelled edamame (soybeans), thawed
  • ¼ red onion, sliced thin
  • 1 C shredded carrot
  • ⅔ C fresh blueberries
  • ½ C dried cranberries
  • ½ C cashew pieces
  • ½ C raw sunflower seeds
  1. Whisk sugar, vinegar, salt, pepper, and olive oil together in a bowl until sugar is dissolved; set aside.
  2. Toss kale, edamame, red onion, carrot, blueberries, cranberries, cashew pieces, and sunflower seeds together in a bowl.
  3. Pour dressing over and toss to coat.
  4. Cover bowl with plastic wrap and refrigerate at least 4 hours.
