- 1 medium jicama root, peeled and sliced in thin matchsticks
- 1 avocado, ripe but firm, cut into chunks
- 2 Tbsp. chopped fresh cilantro
- 1 1/2 tsp. extra virgin olive oil
- 1 Tbsp. agave nectar
- 1/2 tsp. Himalayan salt
- Juice of 1 lime
- In a large bowl, whisk together salt, agave nectar, lime juice, and oil.
- Add avocado, jicama, and cilantro and toss together.
- Let marinate in refrigerator for 1 hour.
