Jicama-Avocado SaladAuto Draft

Ingredients

  • 1 medium jicama root, peeled and sliced in thin matchsticks
  • 1 avocado, ripe but firm, cut into chunks
  • 2 Tbsp. chopped fresh cilantro
  • 1 1/2 tsp. extra virgin olive oil
  • 1 Tbsp. agave nectar
  • 1/2 tsp. Himalayan salt
  • Juice of 1 lime

Instructions

  1. In a large bowl, whisk together salt, agave nectar, lime juice, and oil.
  2. Add avocado, jicama, and cilantro and toss together.
  3. Let marinate in refrigerator for 1 hour.
