Ingredients
- Salad
- 1 Head of Romaine Lettuce or mixed baby greens, torn into bite sized pieces
- 1 apple, cored and chopped
- 1 pear, cored and chopped
- 1 cup nuts (I used walnuts)
- 1/4 cup dried cranberries
- Lemon Poppyseed Dressing
- 1/2 cup lemon juice
- 1 t. dijon mustard
- 2 t. chopped onion
- 1/2 t. himalayan pink salt
- 2/3 cup salad oil
- 2 packets stevia
- 3 T. blue agave nectar
- 1 T. poppy seeds
Instructions
- Pile fruit, nuts, and cranberries on top of lettuce and drizzle with Lemon Poppyseed Dressing (recipe to follow) 2 servings
- Blend lemon juice, dijon mustard, chopped onion, salt, oil, stevia and agave nectar in blender until smooth. Slowly add poppy seeds, blending on low until blended. 8 servings
